Sarah’s Chicken Skewers

Serves 2

Ingredients

  • 1 tablespoon of olive oil
  • 1 lemon juiced,
  • 1 crushed clove of garlic
  • 1 teaspoon of oregano
  • Pinch of cinnamon
  • 1/4 teaspoon of paprika
  • 1 chicken breast chopped

Method

  1. Combine the lemon juice, oil, garlic, oregano, cinnamon and paprika in a wok, add the chopped chicken and refrigerate for 1 hour to marinate.
  2. Thread the chicken pieces onto skewers and cook for 8 – 10 minutes
  3. Enjoy with a salad

Standard versatile mince recipe

Serves 4

Ingredients

  • 400 grams of mince of choice
  • 1/2 cup of chopped broccoli
  • 1/2 cup of chopped capsicum
  • 1/2 cup of chopped carrot
  • 1/2 cup of water
  • 1 teaspoon of dried parsley
  • 1 teaspoon of dried basil
  • 2 cloves of garlic
  • 1 tablespoon of olive oil
  • Salt and pepper to taste

Method

  1. Add the oil, chopped onion and garlic to a saucepan. Cook until transparent. Add the mince and cook until brown. Add the herbs, chopped vegetables and water and cook for a further 10 minutes.
  2. Season with salt and pepper and garnish with fresh herbs.

Note – you can use 1.5 cups of frozen vegetables for this recipe.

Quick and easy pizza

Ingredients

  • 1 tortilla
  • 1 teaspoon of olive oil
  • 1 crushed garlic clove
  • Salt and pepper to your taste
  • 3 tablespoons of tomato paste/sauce
  • 1 cooked chicken breast sliced
  • 1/2 capsicum chopped
  • 2 spring onions chopped
  • 1/2 cup of shredded mozzarella cheese
  • 1 teaspoon of dried parsley

Method

  1. Preheat the oven to 200°c. Place tortilla on a baking tray. Add the garlic, salt and pepper. Brush with olive oil. Bake for around 4 minutes.
  2. Remove the tortilla and then add the toppings starting with the tomato sauce, then chicken, veg and cheese.
  3. Back into the oven for another 5 minutes or until cheese is melted.

Note – you can use a store bought barbecue chicken or cook your own chicken breast.

Easy beef stir-fry

Serves 4

Ingredients

  • 2 tablespoons of light olive oil
  • 400 grams of beef cut into thin strips
  • 1 1/2 cups of chopped broccoli
  • 1 chopped capsicum
  • 2 cloves of garlic
  • 2 carrots sliced thin
  • 1 spring onion chopped
  • 2 tablespoons of tamari (or soy sauce)
  • 2 tablespoons of sesame seeds
  • Garnish with fresh coriander

Method

  1. Heat the vegetable oil in a fry pan or wok if you have one and cook the beef until brown, this should take around 5 minutes.
  2. Remove the beef and then add the vegetables to the pan or wok including the garlic and cook for 2 – 3 minutes.
  3. Add the beef back in then the soy and sesame seeds and cook for a further couple of minutes.
  4. Serve with fresh coriander on a bed of cauliflower rice or rice.
