10 Mouthwatering Recipes in Honor of National Chicken Month!

Cluck, cluck,
cluck. Got poultry? Folks, September is National Chicken Month, and
it’s time to honor this tasty and versatile food that’s a favorite
among pollotarians! Wait, what exactly is a pollotarian? Well, I’m
glad you asked! According to Urban Dictionary, it’s someone who
will not eat red meat. They basically stick to a diet of chicken,
turkey, and other poultry. Yes, at the end of the day, they’re
omnivores like many of us; pollotarian is just a fancier term for
lovers of all things chicken. And I’m one of them. Not quite a pollotarian, because I live on a healthy diet of
bacon and bologna in addition to chicken, but I do love all things
chicken. Essentially, I try to stick to five main food groups:
chicken, fried chicken, bacon-wrapped chicken, chicken pot pie, and
buffalo wings. Great diet, huh? P.S. I don’t discriminate with my
chicken — breast, leg, wing, giblet, bring it on. I’ll eat it
whether it’s roasted, grilled, or fried. I don’t care how it’s
prepared. And whoever says chicken is bland and boring, well, I
think they are bland and boring, so there! Enough about
me, though, let’s take a look at some scrumdiddlyumtious chicken

Chicken Pot Pie – Comfort
food at its finest! This right here is chicken pot pie for the
soul! Fall and winter, we are so ready for you! Cook this up for
your family and they will be singing your praises. Marie

Arroz Con Pollo – Fun fact of
the day: This was Ricky Ricardo’s favorite dish. Lucy would make it
for him on special occasions (Lucy, you got some ‘splainin’ to do).
When chicken and rice come together, you know your taste buds are
in for a delightful treat! Swoony-swoon!

Southern Fried
– What the world needs now is love, sweet
love, it’s the only thing that there’s just too little of. Plan B:
What I think the world really needs is some southern fried chicken.
Talk about love in every bite. Salty and crispy on the outside,
juicy and tender on the inside.

Restaurant-Style Buffalo Chicken
– Have I told you lately how much I love Buffalo
wings? Oh, I mentioned it earlier? Please forgive me. Y’all, these
Buffalo wings are popping with flavor! Delicious with a capital
‘D’! And guess what — just in time for football season!

Buffalo Chicken Enchiladas
Feeling the gnawing hunger pangs yet? No? Well, it’s about to kick
into high gear now! Hold on tight, folks, because this right here
is a humdinger of a recipe! Buffalo wings, Buffalo wing sauce,
enchilada sauce, cheese, cilantro, and tortilla all marinated
together creating a spicy, melty, saucy, chickeny perfection.

Bacon Wrapped Jalapeno Chicken
– I know, I’ve become too predictable, but
sometimes predictable is good. You can always count on me for your
bacon fix! When you need a little pick-me-up, just refer to my
articles. You’re sure to find a bacon-wrapped something in each of
my posts. These bites are crazy good! Forget pigs-in-a-blanket, we
want chicks in a blanket!

Homemade Chicken Cheesesteaks – I’m going to run with the last idea and say that you can always
count on me for something cheesy too! I mean, everything tastes
better wrapped in bacon and/or drenched in melted cheese. This
cheesesteak is no different. The white cheddar cheese sauce in this
sandwich is out of this world! If you’re going to drool, now is the

Chicken Tacos – Mexican for
dinner tonight? Enchiladas or tacos? How about both?! Call the
family over and get the assembly line going! These chicken tacos
are a must-try! Crunchy, meaty, cheesy, greasy, and, best of all,
homemade! Everything you want in a taco and more!

Caprese Grilled Chicken
First off, it’s grilled, not fried. However, it is topped with
cheese. We’re making progress though. Baby steps. Caprese salad and
grilled chicken topped with balsamic reduction sauce; a delectable,
wholesome, and hearty dish indeed!

BBQ Chicken Pizza – Ready for the challenge? We’re
going to try to duplicate CPK’s famous BBQ Chicken Pizza. If you
have a weakness for pizza (like a certain someone hiding behind
this screen), I suggest you call some friends over for a pizza
party! Make sure to save some leftovers for me. I love cold
pizza… oh, and hot pizza. You can do the prep work. I’ll just eat
it to make sure it’s suitable for your guests.

I’m so glad
bikini season is over! Thank heavens for extra fall layers. Pun
intended! We’ll be nice and plump just in time for winter!
